Recipe: Black Bean Salad

 

 

An excellent, easy summer salad.

 

Vinaigrette:

3 Tablespoons extra virgin olive oil

2-3 Tablespoons lemon juice

2 ½ teaspoons fresh minced garlic

¼ teaspoon cumin

 

Salad:

2 (15 oz) cans of black beans – drained and rinsed

1 white onion – diced

½ red bell pepper – diced

½ green bell pepper – diced

2 ripe tomatoes – seeded and diced

3 Tablespoons shredded cilantro

 

Mix the vinaigrette, set aside.

Toss the remaining ingredients in a bowl with the vinaigrette.

Serve at room temperature.
